Myriam’s Flavor Profile:

Depending on the mood of a moment one wine will please my palate more than another. When I feel Sophisticated: I enjoy a wine that makes me feel romantic, something that has bold flavors and also complex, dark fruit notes such as acai, black cherry and figs really develop nicely in red wine and can really turn the night on.

When I am On a budget: As a wine connoisseur, I know that most wines that are overpriced, are just that overpriced. I don’t believe a wine needs to be forty dollars and up to be worthwhile. That is why I devote my time trying to find cheap and worthwhile alternatives. The rose wine is one that is underestimated. I nice dry and slightly fruity rose can really turn your evening or night into a delight. Order some pizza and your good to go!
 

Sometimes I just want to be Bold: What’s the point if you are going have something, go big or go home. I love a strong flavor profile, the more complex the better. As a scotch and cigar connoisseur my palate craves for complexity and strong notes. I love a wine that coats my palate with strong notes (dark fruit, earthy bold flavors). Chianti, shiraz and Malbec have some of those strong notes I look for when I go out for a steak dinner.

Tara’s Flavor Profile:

My drink of choice is usually a classic gin cocktail. There is nothing like the fragrance of fresh pressed citrus and the aromatics from herbs used in a classic cocktail to make you realise the importance of ingredients and technique. I realise the same applies to wine. The importance of the terroir, the weather, and the aging process is crucial to produce a great vintage. Just like any other novice I am still trying to comprehend the immense supply.

To Celebrate, I like to pop open a bottle of crement or cava: a little bubble is always refreshing. When dining with friends I pick cabernet sauvignon, the cherry note is quite “passe-partout”. On a first date, I prefer a pinot noir to keep things light and alive. Do I drink anything else other than wine? Of course, on a late night when a friend comes over there is nothing like a good scotch and a tall wingback chair to open a great conversation.

Always on the run, I grab anything I can in terms of food and drink. Airports, convention centers, or public market the abundance is never quite the same. Sometime it is a bonanza of food and sometime it is like crossing the desert.

 

I travel the world and I am always surprised to find new flavors in the food and drinks I discover on my journeys abroad. This is when I come alive. Meeting new people and sharing a drink with them is what I live for. Everyone does it in their own way: chin-chin, santé, salud, kampaï, etc. All that matters to me it sharing that moment.
